Ayam Betutu - Betutu is famous food in Bali. In Bali, betutu is a nice food for food lovers. Many balienese make it for private ceremony in the temple. Almost all of nasi campur in Bali have betutu in it. It is usually roasted chicken or duck with warm spices which are popular in Bali and Lombok. This dish becomes very popular in Indonesia, and almost every tourist ever eats it. The society in Bali also eats this food and cooks it as a gift to someone else on a special occasion. It can take up to 24 hours to cook depending on how long you marinade it. In this recipe will learn how to make Ayam Betutu. This is an easy recipe but really good to serve your friends a special food, especially if ayam betutu is open by wrapping it in banana leaves. Special balienese Food of Ayam Betutu

The betutu recipes below can be served for six people depends. Here some ingredients of Ayam betutu that you need.

A. Ayam Betutu ingredients:
  1. 1 chicken
  2. 4 bay leaves (use enough bananas to chicken wrap or use of tin foil if you do not have banana leaves)
B. Stuffing:
  1. 100G leaves of Cassava or cabbage if you cannot get cassava leaves.
C. Spice pastes:
  1. 1 thumb-size piece of galangal
  2. 1 thumb-sized piece of galangal less or kencur
  3. 1 thumb-sized piece of ginger
  4. 1 thumb-sized piece of turmeric
  5. 6 cloves of garlic
  6. 4 shallots
  7. 4 stalks lemon (chopped)
  8. 2 candlenuts
  9. 2 red peppers
  10. ½ teaspoon coriander
  11. ½ teaspoon black pepper
  12. ¼ teaspoon nutmeg
  13. ½ teaspoon sesame seeds
  14. ¼ teaspoon cumin powder
  15. 1 teaspoon shrimp paste
  16. Salt
Methods:
  1. Put onions, garlic, ginger, galangal, turmeric and chili in a bowl of a food processor and then add lemon, black pepper, candlenuts, ground coriander, nutmeg, sesame seeds, shrimp paste, cumin, and salt. After that make it to be thick paste.
  2. Put chicken in a bowl, then mix with ¾ of spices and add bay leaves.
  3. For filling, mix the cabbage with marinade paste, then put it on the chicken cavaty.
  4. Cover the whole chicken by using the leaves of banana or aluminum foil and place it in the refrigerator around two hours.
  5. Preheat your oven to medium heat, and cook ayam betutu in your oven until it cooked perfectly. Serve it with rice, Sambal matah, and peanuts. That’s all about Ayam Betutu
